Ingredients

    Trader Joe's Harvest Grains-dry, 0.75 cup (cook first)
    Yellow Bell Pepper 2
    Green Beans (snap), 8 beans (sliced)
    Asparagus, fresh, 3 spear, sliced
    Mushrooms, fresh, .5 cup, pieces or slices
    Parmesan Cheese, shredded, 4 tbsp
    Gorgonzola Crumbles, 2 tbsp
    Oregano, fresh, to taste
    Parsley, .5 cup
    Leeks, .5 cup
    garlic, minced

Directions

1. Cook Harvest Grains per instructions.
2. Brown garlic and leeks. Add green beans, asparagus and cook for a few minutes. Add mushrooms.
3. Add dried spices to taste. I used Marash Pepper, Dill and Trader Joe's 21 Seasoning Salute.
4. Soak peppers in warm water for 5 minutes.
5. Mix up grains, vegetables and grated cheese.
6. Stuff peppers and bake in about 1" of water at 350 degree oven for about 30 minutes.
