Ingredients
-
Carrots, raw, 4 cup, grated (remove)
*Pineapple, canned, 2.5 cup, crushed, sliced, or chunks (remove)
Raisins, 1 cup (not packed) (remove)
Mayonnaise, regular (mayo), .75 cup (remove)
Granulated Sugar, 3 tsp (remove)
Lemon juice, .5 tbsp (remove)
Directions
Chill all ingredients except sugar for at least 30 mins. mix suger into pineapple. add mayo. add lemon juice.
add raisins to carrots.
add dressing mixture to carrots and raisins.
chill.
I found that it would be better to drain some of the juice off the pineapple. It's not bad if you use all the juice...it is just a wetter salad. Use a slotted spoon.
This salad may be refrigerated for 72 hours.
It taste just like the resturant's version.
Enjoy!
