Introduction
This is a recipe I got off of a website (can't remember which one) that sounded really good.*I don't add the cheese in the crockpot as the original recipe calls for. I prefer to sprinkle it on top of the sandwich.*

Ingredients

16 ounces sauerkraut, rinsed and well drained
4 to 6 ounces sliced lean corned beef, diced
1 C 2 % Swiss cheese shredded
1/2 cup Thousand Island Dressing, low-fat or fat free
Directions
In slow cooker combine sauerkraut, corned beef, and *Swiss cheese*. Blend in Thousand Island dressing.
Cover and cook on low for 6 to 8 hours.
