Introduction
Chimichangas made healthy by baking instead of deep frying! Can add any condiments to taste when serving such as salsa, black olives, shredded cheese, lettuce, tomato, or sour cream! Yum! Ingredients

* *Mission whole wheat tortillas, 6 servings
* Chicken Breast, no skin, 8 ounces
* Salsa, 1 cup
* *Tomatoes, red, ripe, canned, with green chilies, 1 cup
* Beans, black, 1 cup
* Olive Oil, 2 tbsp
Directions
Preheat oven to 350F.
1. Dice chicken and cook in a skillet until no pink is left. (You can season to taste with garlic powder, chili powder, cumin, and cilantro.)
2. Add salsa, diced tomatoes & chilies, and black beans to skillet and heat through.
3. Put 1/6 of chicken mixture on each tortilla, fold in sides, and roll up the tortilla.
4. Place in baking pan and brush tops of chimi's with olive oil and place uncovered pan in preheated oven.
Bake for 15 to 20 minutes.
Add desired toppings and serve!
Makes 6 Chimichangas.
