Introduction

Perfect for Cinco de Mayo, or anytime you want just a little Mexican food! Perfect for Cinco de Mayo, or anytime you want just a little Mexican food!

Ingredients

    2 Tbsp butter
    2 Tbsp minced onion
    8 oz can of tomato sauce
    4 oz can of diced green chilis
    1 tsp Italian seasoning
    1/2 tsp celery salt
    1/2 tsp pepper
    2 eggs
    1 cup light cream
    6 corn tortillas, torn into pieces
    1/4 lb Muenster cheese, sliced
    1/2 cup Cheddar cheese, grated
    1/2 pint sour cream
    paprika

Directions

Melt butter in skillet, add onion and saute (do not brown). Add tomato sauce, green chilis, Italian seasoning, celery salt, and pepper. Simmer for 5 minutes. In a bowl, lightly beat eggs, adding cream, and mixing well. Remove tomato mixture from heat and mix into egg mixture. Cover the bottom of a 2 qt casserole dish with 1/3 of the torn tortillas, 1/3 of the sauce mixture, and 1/3 of the Muenster cheese. Repeat twice. Top with sour cream and Cheddar cheese. Garnish with paprika.

Bake at 350 degrees for one hour.

    Incredible!
    Very good. I make w/lowfat cheese, & sour cream. I also use extra lean beef because that's all I have in my kitchen. - 7/11/09
