Introduction
An easy way to have a healthy dinner waiting when you arrive home. I served it with steamed red potatoes and aspargus and no one missed the Hollandaise! This makes a zesty flavorful meat for sandwiches and salads. Marinade could also be used for grilled chicken breast, fish or seafood, but marinate for only 1-2 hours. Ingredients

2 1/2 lbs raw turkey breast (not boned roast)
Marinade
2 lemons
1 teaspoon crushed red pepper flakes
2 tablespoons fresh rosemary, chopped or 1 teaspoon dried rosemary
2 tablespoons fresh oregano, chopped or 1 teaspoon dried oregano
2 tablespoons spicy mustard
1/2 cup dry white wine
2 garlic cloves, peeled and minced
salt and pepper (to taste)
Directions
Grate zest from lemons, and juice them.
Mix zest and juice with remaining marinade ingredients in zip lock bag.
Place turkey in zip lock bag, removing as much air as possible.
Refrigerate several hours, or (preferably) overnight, turning bag occassionally to coat breast.
To cook, place turkey and marinade in the crockpot, cover, and cook on low for 6-8 hours, or until tender.
Serve hot.
To use for salads or sandwiches, cool; cover and refrigerate.
Slice or chop.
