Introduction

Number of Servings: 8

Ingredients

    2 cups chicken broth
    2 cups beef broth
    1 can kidney beans
    1 can crushed tomatoes
    2 carrots
    1 large potato
    onion
    1 cup frozen peas
    1 pkg frozen spinach
    1 tsp garlic
    1 tbsp parsely
    1 tsp oregano
    1/2 tsp margaram
    1/2 tsp basil

Directions

Slice carrots, 1 slice of onion and dice potato.
Throw in crockpot, along with broth, kidney beans and tomoto. Add seasonings. Heat on low for 8 hours, near the end add thawed and drained spinach and frozen peas.

    I'm going to swap out the broth for Trader Joe's low sodium vegetable broth. That should bring the sodium down to tolerable levels. That and using non-canned kidney beans. - 5/31/09
