Ingredients

2 cups cottage cheese
8 oz (1 cup) grated mozzarella
12 oz cooked pasta (any kind)
1.5 cups marinara sauce
8 oz cooked ground beef
1 cup chopped onions
1 cup sliced mushrooms
Directions
In a large pot, bring water to a boil. Add pasta. When done, strain. Put pasta back in pot, but not over heat. Add reamining ingredients and place in a 13x9 glass casserole. Cover with foil and bake at 375 for 35-45 minutes, or until cheese is melted. This dish can be frozen and saved. To do so, bake at 375 for 15 minutes, let cool and freeze. Can be frozen for up to 6 months. To recook, let thaw out for 3 hours, then bake at 375 for 25-35 minutes or until cheese has melted.

This was great, so easy to make and the kids loved it and thanked me for making them a "special dinner"! Tasted great - cheesy, yummy and filling. I used ~16oz pasta and ~3cups pasta sauce and it made a LOT - my fam of 4 ate almost 1/2 for dinner. Big hit, will be in regular dinner rotation. Thanks! - 8/5/09
