Number of Servings: 8

Ingredients

    5 cups thinly sliced red cabbage (about 1.5 pounds)
    1/2 cup dried cranberries
    1/3 cup rice vinegar
    1/3 cup sugar
    2 tablespoons white wine vinegar
    2 teaspoons olive oil
    3/4 teaspoon salt
    1/2 teaspoon ground black pepper
    2 1/4 cup thinly sliced granny smith apples
    1/4 cup chopped pecans, toasted

Directions

Combine cabbage and cranberries in a large bowl. Combine rice vinegar, sugar, white wine vinegar, olive oil, salt and pepper, stirring with a whisk; drizzle over cabbage mixture and toss to coat. Cover and chill for 2 hours (the cranberries will plump up nicely, too). Add apple and toss to combine, then sprinkle with pecans before serving.
