Ingredients

    Pork Loin about 2 - 4 pounds
    salt and pepper
    garlic powder
    1 large onion, sliced
    1/2 of sugar or splenda
    1 1/2 cups of hot water
    4 tablespoons lite soy sauce
    4 tablespoons sherry
    1 teaspoon ground ginger
    6 tablespoons red wine vinegar
    2 tablespoons of ketchup
    1 can pineapple chunks, drained


Directions

season pork loin with salt, pepper and garlic. Brown roast on all sides or place under broiler for 15 to 20 minutes to remove some fat. Place onion in bottom of slow cooker, top with the pork. Combine sugar, hot water, soy sauce, sherry, ground ginger, wine vinegar and ketchup. Pour over the roast. Cover and cook on low for 9 to 11 hours Or cook on high for 4 hours. About 1 hour before donw, add the pineapple chunks and any other vegetables you want.

To thicken gravy, blend 2 tablesoons cornstarch with tablespoons cold water. Set the slow cooker on High; add constarch mixture. continue to cook until thickened.
