I'm eating low carb so instead of using rice, I used "cauliflower rice" (chopped up cauliflower) instead. It was still very good and I got my veggies!!! - 8/3/11

I have to say this is a great way to make pork loin chops so tender and tastey. I made it last night. and left overs I froze so I could take it to lunch one day next week. And will surely make it again. - 7/9/09

Great dinner! To save calories and sneak in more veggies for my kiddos, I served over cauliflower "rice". - 4/24/12

I made this as directed on the stovetop. The flavor in the sauce was nice, but the pork came out rather dry. Perhaps I should have finished it in the oven instead? - 8/15/11
