Introduction

I found the original recipe here on Sparkpeople but made a few alterations to it for my needs and tastes. I found the original recipe here on Sparkpeople but made a few alterations to it for my needs and tastes.
Number of Servings: 10

Ingredients

    1 lb extra lean ground beef, browned and drained
    2-16 oz cans low sodium, low fat chicken broth
    2-16 oz cans kidney beans, undrained
    2- 14.5 oz cans diced tomatoes, no salt added
    1/2 head cabbage, shredded
    1 small onion, chopped
    1 small green pepper, chopped
    4 lg. stalks celery, chopped

Directions

Combine all ingredients in crockpot. Cook on low, 6-8 hours.

Yields 10 1-cup servings

Notes: I drain kidney beans and rinse them to help eliminate some of the sodium as I find it very hard to keep my sodium intake where it should be.

I also cooked mine on the stovetop, let simmer until veggies are tender crisp.

Freeze in individual serving size dishes for a quick lunch at work to save from the high calories from eatting out!
