Introduction

This is a great muffin for those people who can't tolerate gluten or are looking to introduce a new grain into your diet. This is a great muffin for those people who can't tolerate gluten or are looking to introduce a new grain into your diet.
Number of Servings: 12

Ingredients

    1 cup Quinoa Flour
    1 TBSP Baking Powder
    1/2 tsp Baking Soda
    1/8 tsp Salt
    1 cup Mashed Bananas
    3 TBP Honey
    1 Large Egg
    1/4 cup Unsweetend Applesauce

Directions

Preheat oven to 350 degrees F. Grease muffin pan or line with paper muffin cups.

In medium bowl combine flour, baking powder, baking soda and salt.

In a separate bowl, combine banana, honey, egg and applesauce.

Slowly add dry ingredients to banana mixture and blend well.

Scoop batter into prepared muffin tin and bake 15-20 minutes or until toothpick inserted in centre comes out clean. Cool before serving.

Make 12 muffins.
