Introduction

Not my Granny's Bell Peppers! Not my Granny's Bell Peppers!
Number of Servings: 8

Ingredients

    2 lbs Ground Beef
    2 large cans stewed tomatoes, coarsely chopped (save juice)
    2 c Long Grain White Rice (raw)
    4 Lg Eggs (raw)
    1 Lg Yellow Onion, diced
    1/3 c diced Jalapeno Peppers
    salt, pepper to taste

    4 large Green Bell Peppers, halved and seeded

Directions

Drain the tomatoes into a large dutch oven. Then, mix the remaining ingredients, except the Bell Peppers. Stuff each pepper with the beef mixture (they will be overflowing) and place carefully into the tomato juice in the dutch oven (meat side up). Cover and bring to a boil. Reduce heat and simmer until done.

    Very Good
    I too have always baked my stuffed peppers. Because of the summer weather, I think I will try them this way. I did have to omit the Jalapeno Peppers as my own personal preference. - 7/17/09
