Number of Servings: 20


    1-1/2 Cups Oats (quick or old fashioned, uncooked)
    1-1/4 cups all-purpose flour
    1/2 cup firmly packed brown sugar
    1 teaspoon ground cinnamon
    1 teaspoon baking powder
    3/4 teaspoon baking soda
    1 cup unsweetened applesauce
    1/2 cup nonfat milk
    3 tablespoons oil
    1 large egg white


Makes 20 muffins.

Heat oven to 400. Lightly grease bottoms only of muffin pan (or use baking cups). Combine dry ingredients; mix well. In separate bowl, combine applesauce, milk, oil and egg white. Add to dry ingredients and mix until JUST moistened (or they get tough, as with all muffins). Fill muffins cups evenly. Bake 14 to 16 minutes or until deep golden brown. Let stand a few minutes, remove from pan and serve warm.

    Delicious! I actually omitted the brown sugar and milk, added and extra egg and 1/2 can of whole cranberry sauce. Thanks! - 2/25/10
