Ingredients

    1 cup low fat milk (1%)
    1/2 cup agave necture
    1/4 cup palm sugar
    1 teaspoon vanilla extract
    1 cup non fat plain greek style yogurt
    1/3 cup dried milk
    1/2 cup pomegranate juice (or 1/4 cup pomegranate concentrate/pomegranate molasses)
    1/2 cup mini chocolate chips
    pinch of salt

    Optional: 1 teaspoon xanthan gum (makes them creamier)

Directions

in a small saucepan, combine the the milk, agave syrup and palm sugar. Cook over medium heat, stirring as needed, until sugars dissolve into the milk. Set aside to cool (you can refrigerate to speed up the process).

In a food processor or powerful blender, blend the milk/sugar mixture, vanilla, yogurt, dry milk, pomegranate juice, salt and xanthan gum (if using) until creamy and well combined - about 1 minute.

Add mini chocolate chips and pulse 1-2 times to mix - you don't want to break them up, just get them distributed.

Pour into ice cream pop molds and leave in freezer for 4 hours or overnight to harden.

Makes 12 (6" long) round popsicles
