Ingredients

    2 lbs. chicken legs and thighs, skin removed
    1 c. corn flake crumbs
    1 Tbsp. seasoned salt
    1/2 c. nonfat evaporated milk
    dash of paprika

Directions

Wash chicken pieces and remove skin. Place 1/2 c. evaporated milk in bowl for dipping; place corn flake crumbs and 1 T. seasoned salt in second bowl. Place foil on the bottom of 10x14" baking pan. Dip each piece of chicken in milk, then coat in crumbs and place on baking sheet. Sprinkle with paprika. Bake at 350 degrees for one hour.
This is enough for 8 pieces of chicken; recipe can be doubled.

    Made this for Sunday supper. Overall, it was very tasty and a great substitute for fatty fried chicken. I do need to fiddle with the cooking time - I'm using a convection oven. I think next time I may use seasonings we use in our typical fried recipe, just to "bring it back home". Thank you! - 1/9/12
