Introduction

We grow kohlrabi in the garden, so we like to pick some when they're still young and tender for this great slaw. The Kohlrabi gives it the cabbage-slaw flavor, but the sugar sweetens it up a notch. Omit the sugar if you use MiracleWhip or another sweeter flavored mayonnaise. We grow kohlrabi in the garden, so we like to pick some when they're still young and tender for this great slaw. Ingredients

    6 carrots, grated
    4 baby kohlrabi, grated
    4 tblsp mayo (or to taste)
    1 mini box of raisins
    1/2 apple, chopped
    1 tblsp sugar

Directions

Grate the kohlrabi and cover in salt, letting stand for 5-7 minutes (or while grating the carrots) to remove excess juices. Grate the carrots into a bowl. Squeeze the kohlrabi until dry, then place in bowl with carrots. Peel, core & chop the apple into the bowl. Add raisins & mayo. Mix. Omit sugar if using MiracleWhip or dressing as opposed to mayo.

Makes about 6 servings of about 1/2 cup each.

    Very Good
    A great-tasting change of pace from ordinary carrot salads or slaw. I was out of raisins and haven't had any chilled yet [just tasted some after it was mixed], so it could easily move to "incredible!" I'll report back!
