Number of Servings: 4

Ingredients

    Fresh Spinach, 3 cups
    Garlic, 1 clove, chopped
    Sun-dried tomatoes, 1/2 cup, chopped
    Pine Nuts, 3 tbsp, toasted
    Olive Oil, 3 tbsp
    Salt and pepper to taste.

Directions

Add clove of garlic to food processor, pulse 2-3 seconds. Add spinach, and pine nuts. Pulse until chopped. In the top of the closed processor, slowly pour in olive oil until pesto is smooth. Fold in chopped sun-dried tomatoes and salt and pepper to taste. Let sit for a few hours before serving.

    Incredible!
    This was delicious! I used 2 gloves of garlic (because I love it) and substituted sunflower seeds for pine nuts because I didn't have any. I will be making this again though. What a great way to use up spinach without making yet another salad! - 8/18/11

    Very Good
    My hubby even thinks it's very good. It's good on a sandwich and I'm sure it would be good on pasta and maybe even on top of some eggs. I had a lot of spinach to use up so I thought I'd try this and I'm glad I did. - 7/31/10
