Ingredients

    1.5 skinless boneless chicken breast halves
    1 package reduced-sodium taco seasoning mix
    1 cup salsa
    2 tablespoons cornstarch
    1/4 cup light sour cream

Directions

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours.

When ready to serve, remove the chicken from the pot. Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

    This was awesome!! I added too much water to the cornstarch, but I then put the sauce on the stove for a minute and it thickened right up. My VERY picky 3 year old declared that this was the "Best Chicken you've ever made, Mama!"
    Easy and awesome - this is a keeper!

    O.K.
    I've made this twice and have had difficulties with it there is no liquid in the crockpot when cooking this then makes the salsa the cooking liquid which then in turn burns in the pot and on top of the chicken. Edges of the chicken become dried out, tried stock that didnt work. Won't make it again - 10/31/11
