Ingredients

2 cans tomatoes
1 can black beans
1 can corn
1 cup quinoa
green onions
chile pepper flakes
Directions
Drain tomatoes, reserving the liquid.
In saucepan, saute onions (or green onions) in oil until translucent. Add chili flakes to taste (I use about 1 tsp. - if you like it hot, add more).
Add 2 cups of reserved tomato liquid (if there is not enough add water to make 2 cups) to the saucepan.
Rinse quinoa very well, and add to the saucepan. Bring to boil, reduce heat and simmer for 10 minutes.
Add the drained beans and corn. Heat and enjoy.
Makes 6 one and a half cup servings (approx.)
