Introduction

I've adapted these muffins from an older recipe I had to increase nutrition. They are not very sweet, but they are enjoyable. I don't like to use artificial sweeteners, but that would be an easy way to increase sweetness for those who want a sweeter muffin or use a nonfat lemon flavored yogurt. Ingredients

    1 (16 oz) can pears, drained
    1 1/2 cups flour
    1/2 cup whole wheat flour
    1/2 cup sugar
    1 1/2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 cup plain nonfat yogurt
    1 egg
    1/4 cup unsweetened applesauce
    2 tsp lemon peel

Directions

Preheat oven to 400. Spray muffin tins with nonstick spray. Dice pears. In a large bowl, combine flours, sugar, baking powder, baking soda and salt. Mix well. In a smaller bowl or a measuring cup (2 cup works well) combine yogurt, egg, applesauce and lemon peel. Mix well. Pour wet ingredients into dry ingredients. Stir until just moistened. Gently fold in pears. Fill muffin cups. Bake 20 - 25 minutes until golden brown. Remove from pans after about 5 minutes.

    Very Good
    I really liked this recipe. I just added a few variations of my own. Instead of white flour I used 2 cups whole wheat mixed with almond meal. Instead of refined sugar I used 1/2 cup Turbinado sugar,and substituted the plain nonfat yogurt for Stonyfield organic yobaby pear & green beans yogart. - 3/15/10

    I'm just as happy passing on artificial sweetners but like to limit my calories. These are very nice just as is. - 7/20/09
