Introduction

Ingredients

1 Pkg Manchuran Ramen Noodles, chicken flavor
4 oz. broiled chicken breast
1/2 red pepper
1/2 16 oz package of cabbage & carrot slaw
1 cup blanche or lightly steamed fresh broccoli
chopped fresh cilantro
black sesame seeds
1 T olive oil
1 T sesame oil
1/3 cup cider vinegar
4 packets Splenda
2 T roasted salted peanuts
4 cups fresh spinach
Lime Juice
Directions
I used lemon juice and lemon pepper on my chicken breasts before I broiled them.
Use a vegetable steamer to steam broccoli until it is just bright green, rinse in cold water
Add slaw mix, chopped red pepper,fresh cilantro, chopped chicken breast, and broccoli to a large tupperware bowl with a lid.
Mix olive oil, sesame oil, splenda, & vinegar
Pour over slaw mixture
Top with peanuts and sesame seeds and add lime juice & salt & pepper
Cover with lid and shake to stir
Serve over cup fresh spinach leaves
Makes 4 servings (I think next time I'll use 1/2 the noodles to save calories for a larger serving and try rice vinegar with pepper for a bit more zip. May also try 1/2 sesame and 1/2 peanut oil.)
