Introduction

this is a great chilli to make when cleaning out your freezer and pantry. feel free to make any changes, all of the ingredients listed here are one that were around the house with no other use! i used italian flavoured veggie ground round but i'd suggest just going with the original kind, the nutritional info is nearly identical. enjoy for a healthy vegetarian meal! this is a great chilli to make when cleaning out your freezer and pantry. feel free to make any changes, all of the ingredients listed here are one that were around the house with no other use! i used italian flavoured veggie ground round but i'd suggest just going with the original kind, the nutritional info is nearly identical. enjoy for a healthy vegetarian meal!

Ingredients

1 cup of canned chick peas (about half the can)
    1 can of fava beans
1 can of yellow kernel corn
    1 can of whole mushrooms
1 can of condensed campbell's tomatoe soup
2 cans of water (using the empty soup can)
    2 medium tomatoes*
1/2 cup of chopped green peppers*
3/4 cup of chopped red peppers
    1/3 of a medium onion
1 package of italian flavoured veggie ground round**

    _______

    chilli powder
    cayenne pepper
    frank's red hot hot sauce

    * in my house, whenever a tomatoe or pepper is about to go bad we stash it in the freezer for uses such as this
** again, original might be a better choice

Directions

rinse and drain all canned vegetables. chop all fresh (or frozen / defrosted) vegetables. crumble the veggie ground round.

add all of the first set of ingredients to a large pot. stir well, and heat on medium heat, stirring.

once heated thouroughly, add as much (or as little) chilli powder, cayenne pepper, and hot sauce as your heart desires. continue heating and stirring. allow to simmer (this really allows the flavours to cultivate).

makes about 7 servings (1 bowl = 1 serving)
