Introduction

Ingredients

    .25 C orange juice
    2 T lime juice
    2 T Light Sour cream
    salt and pepper
    .25 small cabbage (8 oz) shredded
    1 C corn kernals (1-2 ears or frozen and thawed)
    1 jalapeno
    1 T olive oil
    1 LB Orange roughy
    8 Small Tortillas

Directions

large bowl: whisk together orange and lime juices, sour cream, 1/2 tsp salt and 1/4 tsp pepper.

Add cabbage, corn and jalapeno and toss to combine, let sit tossing occasionally for 10 minutes.

Heat oil in large skillet over med-high heat. Season fish with 1/2 tsp salt and 1/4 tsp pepper. Cook until opaque throughout (2-3 minutes).

Serve the fish with tortillas and slaw.
