Ingredients

    1 1/2 cup All-purpose Flour
    1 1/2 Tsp Pumpkin Pie Spice
    1 Tsp Baking Soda
    1/2 Tsp Baking Powder
    1/4 Tsp Salt
    5 Tbsp Butter, Unsalted
    1/2 Cup Brown Sugar
    1 Egg
    1/4 Cup Buttermilk
    1 Cup Applesauce, Unsweetened

Directions

Makes 8 servings
Coat crockpot bowl with nonstick spray. Place 1 sheet of nonstick foil in the bottom of crockpot bowl, with ends hanging over handles.
Wisk togather flour, pumpkin pice spice, baking soda, baking powder, and salt; set aside

Beat togather butter and brown sugar on high for 1 minute. Beat in egg. Scrape down sides of bowl and, on low speed beat in buttermilk ( mixture will look curdled). Beat in applesauce. Add flour mixture to bowl and beat on low speed until combined.

Spread batter into crockpot. Place a clean dish towel over bowl then put on lid. Cook on high for 2 1/4 to 2 1/2 hours or until toothpick in center comes out clean. Use foil to lift out cake. Cut into slices.
Garnish if desired.

    This was amazingly delicious! I was a bit skeptical when I poured the batter into the crock pot....but 2 1/2 hrs later, I pulled the cake from the crockpot using the foil "handles" and enjoyed the most delicious, moist cake!!! and my crock pot was spotless!! and ONLY a 1/2 c of br. sugar-scrumptous! - 1/26/10

    Incredible!
    I loved this! I did not have pumpkin pie spice, so I used nutmeg (a little over a 1/4 tsp), cinnamon (a little over 3/4 tsp), and cloves (a little over 1/4 tsp). I also used a buttermilk substitute (by using a tbsp of white vinegar, and 1 cup minus tbsp, let sit for 5 minutes,use only 1/4c. - 10/16/12
