Ingredients

5 small russet potatoes (100-120 cals each)
4 medium carrots
2 10 0z cans of campbells healthy request cream of chicken soup
1 pound extra lean ground beef
onion powder or half packet of lipton onion soup mix
Directions
Preheat oven to 425 degrees
Peel and slice potatoes about 1/4 in thick
Slice carrots into coins
Cook/crumble ground beef in frying pan and add onion powder to taste or 1/2 packet of onion soup mix
Layer cooked beef, potatoes, carrots in round casserole dish. Continue layering until all ingredients used. Pour the two cans of soup over top, cover and bake for 45 minutes or until potatoes and carrots are tender. Makes 6 servings.
