Ingredients

1 tbsp olive oil
1 sm red onion chopped
1 cup red cabbage sliced
1/2 med eggplant cubed
1 cup chopped broccoli
1/2 med summer squash cubed
1 pkg Chik'n style smart strips (or tofu, or any other meat substitute)
1/2 cup Soy Vey Teriaki Sauce (or your favorite teriaki sauce)
Directions
Heat oil in skillet or stir fry pan, add onions and cook until softened.
Add cabbage, broccoli and eggplant and cook about 5 minutes.
Add summer squash, chik'n strips and teriaki sauce and cook on low another 5-8 minutes.
