Introduction

This burrito is really filling. I also substitute low fat cooking spray for the olive oil, egg beaters for the egg whites, and a low fat cheese or no cheese instead of American. My husband loves it. I cook a large portion of onion and peppers and keep them in the fridge so this is even faster to make. This burrito is really filling. Ingredients

    cooking spray or olive oil
    1/2 cup chopped onion
    1/2 cup green bell pepper
    3 egg whites or egg beaters
    2 slices of American cheese (or low fat sub)
    2 whole wheat tortillas

Directions

Add olive oil or cooking spray to pan
Add onions and peppers and cook until desired tenderness
Add egg whites and cook through
Place a whole wheat tortilla on a plate with cheese.
Add egg mixture and roll up. Repeat for other tortilla.

Serves 2.
