Introduction

Low fat version of one of my slow cooker faves! Low fat version of one of my slow cooker faves!
Number of Servings: 4

Ingredients

    *1.2 lb 99% lean boneless skinless chicken breast
    *1 can no salt added corn( drained)
    *1 can black beans( rinsed)
    *1 jar salsa(mild)
    *1/2 brick fat free cream cheese(cut into little cubes)
    *1 packet Uncle Bens Brown Whole Grain Ready Rice
    optional toppings not added to nurtition info:
    *fat free shredded cheddar
    *fat free sour cream or FF plain greek yogurt

Directions

pour corn and beans in bottom of slow cooker. top with 1/2 jar of salsa. add in chicken breasts and top with remaining salsa. cover and cook on low for 3 1/2 hours. remove chicken and cut into 1in cubes. add cream cheese and cooked rice to slow cooker and stir.add chicken back in and cook for an additional 1/2 hr.

    I won $100 prize in a cook off contest for this delicious meal!! meal had to be low fat, easy to obtain ingredients, consist of protein and high fiber. I make this all the time...yummy - 10/8/09

    This dish was superb, and I would highly recommend it to everyone. My wonderful wife cooked a whole crockpot of this, so we will be eating this for a couple of meals. It should be better the next day, since it has had time to set and take in all of the juices. Yummy !! Dancin Bear - 9/28/09

    Very Good
    my hubby really loved this, my daughter loved it. I liked it quite a bit and I feel like it makes more than 4 servings. because we ate last night for dinner and then we had it in whole wheat wraps today (yummy!) and we still have leftovers!!! I will make again! Smells wonderful cooking! - 9/15/09
