Introduction

I was really wanting to dig into an apple pie today but decided to try and make a healthier version that might be as tasty. While you don't have a crust the oatmeal cookies add crunch and make you feel full!!

Number of Servings: 4

Ingredients

    4 Red Delicious Apples, diced
    6 Oatmeal Cookies broken into crumbs
    1/4 cup Brown Sugar
    1 Tblsp Cinnamon
    1/4 Lemon Juice
    Optional - Melted Butter, 2 Tsps

Directions

1) In a processor pulse oatmeal cookies to fine crumb consistency . Pulse in Cinnamon and Brown sugar.

2) Pour mixture into a medium bowl, let stand

3) Cut and dice unpeeled Red Delicious apples and add to crumb mixture. Toss until coated generously.

4) Add lemon juice and melted butter (if you choose), toss until coated.

5) Pour into a pie pan and bake at 325 for 45 minutes.

Divide the Pie Pan into quarters. Yeilds 4 Servings.
