Ingredients

8 oz. Penne Pasta
1 1/2 cup frozen chopped broccoli
8 slices Turkey Bacon
1 tbsp olive oil
1/2 medium onion, chopped
1/2 tbsp. dried red pepper flakes
1 cup chicken broth (or 1 cup water, one chicken bouillon cube)
1 medium tomato, diced
1/3 cup parmesan cheese
Directions
Place penne pasta and frozen broccoli in a large pot of water. Bring to a boil and cook according to pasta directions.
Meanwhile, cook 4 slices of turkey bacon in a pan, over medium heat, until crisp. Set aside, and cook other 4 pieces. Remove the slices and dice all of the bacon (while onion is cooking).
Add olive oil and chopped onion to the warmed pan. Saute until softened, about 5 minutes. Add pepper flakes and saute for 1 minute more. Add the chicken broth and bacon to onions and heat through.
Drain the pasta and broccoli and transfer to a large mixing bowl. Add the onion mixture and the diced tomatoes to the bowl and mix well. Stir in the parmesan cheese and serve.
Serves 3-4.
