Ingredients

1 8oz. package of tortellini
1/2 of a medium onion
1 14 oz can diced tomatoes
1 10 oz bag of fresh spinach
1 teasoon ground black pepper
2 tablespoon dried basil
2.5 tablespoons while flour
1 cup half and half cream
1/4 cup grated Parmesan Cheese
Directions
Bring a medium pot of water to a boil..add tortellini and cook till tender..about 10 minutes.
Spray 12 inch skillet with cooking spray and add finely diced onion and saute' over medium heat... wash and cut spinach coarsly and add to the onions with water that clings to the spinach.
Add the garlic, basil, tomatoes and black pepper and stir ..allow to simmer.
Put 1 cup of cold half and half cream into a pint jar with a lid...add 2 tablespoons of flour, close with lid and shake well. ...open and add your grated Parmesan Cheese and shake again. Your spinach will be wilted with the juices around the spinach and still green (so don't over cook) add the cream and flour to the spinach... tomatoes and stir till creamy. The tortellini should be cooked. ...so dip out the tortellini with a large slotted spoon and put into the Spinach Tomato Sauce till all the tortellini is in the sauce.... stir till covered with sauce. If it is too thick add pasta water. Serve with a Sprinkle of grated Parmesan Cheese. Serves 6
