Ingredients

100 g ricotta cheese, reduced fat
1 teaspoon dried rosemary (or sage)
1 shallot, chopped finely
4 medium skinless, boneless chicken breasts
2 tablespoons honey
1 teaspoon chili powder (or cayenne pepper)
salt and freshly ground black pepper
Directions
Serves 4
1. In a bowl mix the ricotta cheese with the rosemary, shallot and freshly ground pepper.
2. Cut a deep slit in the side of the chicken breasts and open out to form a pocket. Stuff each breast with a spoonful of the cheese mixture. Secure the pocket with a cocktail stick. Place the chicken breasts on a grill pan.
3. In a small pan mix the honey and chili powder (or cayenne pepper). Melt the honey a little if not already runny. Brush the chicken with the honey mixture and place under a hot grill for 7-8 minutes or until cooked through.
4. Remove the cocktail stick before serving the chicken.
