    I TBSP Olive Oil
    3 cloves garlic, minced
    3 scallions, thinly sliced
    1 celery stalk, thinly sliced
    1 TBSP Cumin
    1/8 tsp cayenne pepper
    2 15 oz cans black beans with liquid
    1 15 oz can diced tomatoes with liquid
    1.5 cups fat free chicken broth


Add all ingredients up to cayenne pepper in a medium size pot and cook until vegetables are soft about 7 minutes.

Add beans, tomatoes and broth, bring to a simmer and cook for 10 minutes. Puree 2 cups of soup in food processor, add back into soup and simmer another 10 minutes. Serve hot.

    This was pretty good, but not great. Could use some cilantro and maybe a little lime juice for more flavor. - 8/10/10
