Ingredients

2 c. 2% milk
3/4 c. water
2 pkg yeast
2/3 c. sugar
1/3 c. oil
3 eggs
2 tsp salt
9 c. flour (approx)
8 c. heavy cream
4 c. sugar
dash salt
16 eggs
12 Tbs flour
3 tsp vanilla
Directions
Makes 20 pie tins, serving size is 1/6 of a pie (120 pieces)
Scald and cool milk. Dissolve yeast in 3/4 c. water. Combine with 3/4 c. sugar, 1/3 c. oil, 3 eggs, 2 tsp salt, and enough flour to make sticky dough, approx 9 c. Let raise twice. Then roll approx 3.5-4 oz into bottom of tin pie plate. Spread approx 1/3-1/2 c of assorted fruit (berries, thin apple slices, peach slices, raisins, rhubarb) on dough, sprinkle with approx 1 tsp sugar.
Cook custard in 4 batches of: 2 c heavy cream, 1 c sugar, dash salt, 4 beaten eggs, 3 Tbs flour. Add 1 tsp vanilla when thickened. Cook till thickened and spread on top of fruit, sprinkle with cinnamon (enough for 5 kuchen).
Bake 350 approx 20-25 min.
