Introduction

This tastes exactly like a cheeseburger and is so good, you can't have just one ... serving! My family, including my grandchildren love this - it is a "man" kind of soup. As my granddaughter said, "It's not a "soupy" soup!" Enjoy! This tastes exactly like a cheeseburger and is so good, you can't have just one ... serving! Ingredients

    1/2 lb. hamburger
    3/4 cup chopped onions
    3/4 cup shredded carrots
    1 cup diced celery
    1 teaspoon basil
    1 teaspoon parsley
    4 tablespoons butter
    3 cups chicken broth
    4 cups diced potatoes
    1/4 cup flour
    2 cups grated Cheddar cheese
    1 1/2 cups milk
    Salt & pepper to taste
    1/2 cup sour cream

Directions

Brown hamburger. Add butter, onions, carrots, celery, basil, and parsley; cover and cook a few minutes to get vegetables hot.

Add chicken broth and bring to boil. Reduce heat, cover and simmer 10-12 minutes or until vegetables are fork tender.

Meanwhile, stir flour into milk; stir well. Add to broth and bring to boil; stirring constantly for 2 minutes or until it thickens. Reduce heat; add cheese, salt & pepper and sour cream.

Serves 8

(I used nonfat milk, 2% cheese, and lean ground round.)

Made this yesterday in the crockpot (6 hrs on low). Added milk & flour last 30 mins & cheese & sour cream right before serving. This was delicious! EVERYONE in the family ate this--VERY, VERY RARE for that to happen (15 dd & 9 ds very picky)! Made for a peaceful, hearty, yummy dinner-THANK YOU JEAN! - 9/19/09
