Ingredients

    2 lb flounder fillets
    1 T Olive Oil
    1/2 c italian bread crumbs
    1/4 Parmesan cheese, grated
    1 t Italian seasoning
    Olive Oil cooking spray

Directions

Spray baking dish with olive oil cooking spray. Lay fillets in pan and brush with olive oil. Mix together italian bread crumbs, italian seasoning and parmesan cheese. Pat bread crumb mixture on top of fish. Spray tops with Olive oil cooking spray. Broil 5-7 minutes. Watch closely so you don't burn.

    I liked this. It took my toaster oven more like 20 minutes though and finally had to turn on "bake" to finish. Will keep in the rotation. - 5/9/14
