Introduction

Ingredients

    1 lb ground turkey brest
    1 medium onion, chopped
    2 teasp garlic
    3 cups chicken broth
    1/2 teasp oregano
    1 teasp cumin
    1/8 teasp crushed red perpper flakes
    2.5 cups diced zucchini
    2 cans, rinsed and drained cannellini beans

Directions

In dutch oven, brown turkey with onion. Once browned, add diced zucchini, cook 5 minutes until zucchini starts to soften. Add remaining ingredients, reduce heat and cook covered, for 20- 25 minutes. Serves 4, at about 1.5 cups, per serving.
The original recipe called for 1/2 cup cheese, to be added after you remove the chili from heat. I omited this, and the chili didn't suffer.
