Ingredients

2.5 cups whole milk
1/2 cup pearl tapioca (not instant)
1/4 tsp salt
2 eggs, separated
1/2 cup sugar
1 tsp vanilla
Directions
1. Soak tapioca in two cups of room temperature water overnight
2. Heat milk in a medium saucepan until just warm
3. Drain tapioca and add it to the milk; add the salt
4. Heat until small bubbles appear around the outside edges of the milk
5. Turn heat to lowest setting and cook covered for one hour
6. Beat egg yolks with sugar until light
7. Add a small amount of the hot milk mixture to the eggs to warm them, then add the egg mixture to the remaining milk mixture, stirring constantly. Cook over medium low heat for 15 minutes.
8. Beat egg whites until soft peaks form
9. Fold the milk/tapioca/egg mixture into the egg whites, then stir in vanilla
10. optional--mix 1/2 cup chocolate chips into the milk/tapoioca/egg mixture before folding it with the egg whites (not included in nutritional info)
