Ingredients

    1 tube refrigerated pizza dough
    1/2 cup artichoke hearts, chopped
    1/3 cup frozen spinach
    1/4 cup fat free ricotta cheese
    1/4 cup fat free shredded mozzerella cheese
    Italian seasoning

Directions

Microwave frozen spinach, then squeeze to get out all the water. Mix spinach and artichokes together.
Preheat the oven to 400 degrees.
Lightly cover cookie sheet with flour.
Roll out pizza dough.
Cut the pizza dough into 4 equal rectangles.
Spread a thin layer of ricotta on each rectangle.
Sprinkle some mozzerella cheese on each rectangle.
Evenly spread the spinach/artichoke mixture on each rectangle.
Roll each of the rectangles on an angle so that when you are finished, the middle is fatter than either end.
Pop it in the oven, bake for 12-14 minutes.
Each serving is one pizza roll-up.

    Based on the previous reviews indicating that this dish needed more flavor, I decided to add chopped red bell pepper, fresh basil, oregano, salt, and pepper. With those ingredients added, the flavor was great. Thanks for sharing the recipe! - 8/12/10

    Making this for the Super Bowl tomorrow, but will be tweaking it... adding mushrooms, Italian Spice mixed into the "Low-Fat" Ricotta and Spinach and Low Fat Mozzarella. Also a little Marinara Sauce into the pizza. I love Spinach, Mushrooms and Artichokes, so we always have them on hand. - 2/3/13

    very good, but def needs + flavor.Im gna add fat free cream cheese and fresh chopped garlic. I used store made wheat pizza dough frm the deli + with the ricotta + cheese you couldnt even taste the healthy switch. Got it from hannaford. - 7/28/10
