1.5 cups white flour
3/4 cup granulated sugar
1.5 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 eggs
1.5 cups zucchini
3/4 cup applesauce unsweetened
about 1/2 cup semi sweet chocolate chips
1/2 cup unsweetened cocoa powder
1 tbsp vanilla extract
Directions
Mix well and then put into muffin cups, filling 2/3 full. Bake for 30 minutes. To add more fiber and make even healthier, use whole wheat flour, throw some flax seed in, use turbinado sugar, and add more zucchini and less chocolate chips. I think this recipe could be tweaked many different ways to your liking. Also, the salt is unnecessary. Next time I will leave it out.
