Ingredients

For the toppings:
four medium to large onions, sliced and rings halved
3 tablespoons olive oil
pinch sugar to help the onions carmelize
2 to 3 boneless, skinless chicken breasts, sliced
2 tablespoons olive oil
fresh broccoli, "trees" cut to bite sized pieces
For the sauce:
4 tablespoons butter
4 cloves garlic, minced or garlic-pressed
3 tablespoons flour
1.5 cups lowfat milk
4 ounces low fat cream cheese
1/4 cup mozarella
Your favorite pizza dough
Directions
Slice onions into about 1/4 inch rings, and cut those in half. Sweat the onions in olive oil over low heat until the onions are translucent and have lost most of their moisture. I cover them, checking every now and then, and stirring. When they are translucent, uncover and continue to cook, stirring more often, until they begin to carmelize. A pinch of sugar helps the onions to color up.
When the onions begin to carmelize, add the broccoli florets and continue to cook until the onions are soft and golden.
While the onions are cooking, cut the chicken into smaller pieces, and saute in more olive oil until cooked through. Feel free to add your favorite seasonings as the chicken cooks. When the chicken is finished, remove from heat, and when cool, cut into bite sized pieces.
For the sauce, melt 4 tablespoons butter in a sauce pan. Add the minced garlic and cook until bubbly over medium-low heat. Add the flour and stir to make a roux. Cook for a few minutes, and then add the milk, a little at a time and stirring to avoid lumps. Stir and cook until thickened. Turn off heat under sauce, and add the cream cheese. Stir until melted. Add a pinch of salt to taste, if necessary.
On your favorite pizza dough, smooth the cream sauce over the middle. Sprinkle the chicken pieces, then spoon over the onion-broccoli mixture, as evenly as possible. Top with a sprinkle of mozarella to hold everything down.
Bake for 20 - 30 minutes at 425 degrees. Makes 10 to 12 servings.
