Introduction

I'm always looking for something new to make with ground beef and threw this together in a hurry! I'm always looking for something new to make with ground beef and threw this together in a hurry!
Number of Servings: 10

Ingredients

    1-1.5 lbs. lean ground beef (substitute ground turkey for lower fat)
    1 cup diced onions
    4.5 cups frozen diced potatoes (southern style
    hash browns)
    1 cup fresh or frozen green beans
    1.5 cups zucchini, quartered and diced
    1 can cream of celery soup
    1/2 cup evaporated milk
    salt and pepper to taste
    1.5 cups shredded cheddar/jack cheese; dvided

Directions

Brown ground beef and onions; drain. Spread frozen potatoes in bottom of 9x13 baking dish and sprinkle 1/2 cup of cheese. Layer with ground beef; add any seasonings you wish and then sprinkle 1/2 cup more of the cheese. Mix green beans, zucchini, soup and milk; pour over beef and spread out. Sprinkle with remaining 1/2 cup of cheese. Bake at 350 for 30 minutes. If you don't care for crispy vegetables, cook for an additional 15 minutes. Makes 10 1-cup servings.

    It was a little bland. Next time I would add more seasonings to it. I had added some to the meat when I was browning that. - 2/2/11

    This was nice to pack up for lunch at work the next day. I would advise cutting up the green beans into smaller pieces so their cook time coincides with everything else better. I think next time I'll try it with turkey. Decent recipe. - 6/30/08
