8 oz. Bag frozen vegetables
1 Tbsp. Lemon juice
1.5 tsp. sea salt
.5 cup plain yogurt
.5 cup half & half
1/5 tsp. honey mixed with 8 oz. tomato paste
Directions
Makes 4 servings.
Convert tikka powder into paste by adding equal parts water, olive oil and powder (4 Tbsp.)
Mix tomato sauce and honey.
In a large skillet, heat olive oil over medium-high heat. Meanwhile, microwave veggies just about halfway to defrost a bit.
Lightly brown chicken, then lower heat to medium, add veggies and stir in tikka paste. Cook for 2-3 min. stirring occasionally.
Next, stir in lemon juice, sea salt and tomato mixture and cook for 3-4 min.
Mix together yogurt and half & half in a small bowl.
Reduce heat to simmer and stir in yogurt mixture. Cover and simmer for 5-8 min. stirring occasionally.
Serve over rice.
