Ingredients

    1 lb extra lean ground beef, browned and drained
    2-16 oz. cans chicken broth (low fat/low salt)
    2-16 oz. cans kidney beans, undrained
    2-14.5 oz. cans diced Ttmatoes, undrained
    1/2 head cabbage, shredded
    1 small onion, sliced to resemble cabbage
    1 small green pepper, diced

Directions

Combine all ingredients in a slow cooker and cook all day on low. One serving = approx. 1 cup
*For quicker assembly, you may use pre-bagged shredded cabbage (may contain carrots-that's OK) and frozen, chopped onions and green peppers.
Freezes well.

    I made this yesterday. My husband and I both enjoyed it very much. I will definitely make it again. It could use a little more flavor. I will add seasoned tomatoes with chiles next time. Very easy to make too. - 9/2/08
