Introduction

This recipe makes either a side dish or a meal and can be served hot or cold. This recipe makes either a side dish or a meal and can be served hot or cold.

Ingredients

    2 cups fresh spinach
    40 oz pasta cooked
    1/4 cup olive oil
    1/4 cup chopped sun dried tomatoes
    1/4 cup pine nuts
    Asiago or grated parmesan cheese (optional)

Directions

Cook pasta to al dente and drain. Put in serving/storage container.
Chop spinach and sundried tomatoes and add to pasta in bowl.
Saute pine nuts in 1/4 cup Olive oil until the pine nuts turn golden. Pour hot oil and nuts over top of pasta and stir. Cover and let flavor 8 hours or overnight. Can be served hot or cold with 1/2 ounce of grated Asiago or parmesan on top.
Makes 8 servings. 294 cal without cheese. 350 with cheese.
