Introduction

Amazingly creamy and easy to make, this one is divine. I usually serve it with rice and some sort of veggie or salad on the side. Amazingly creamy and easy to make, this one is divine. I usually serve it with rice and some sort of veggie or salad on the side.

Ingredients

    4 Large chicken breasts, cut in half
    4 slices swiss cheese, cut in half
    1 cup large mushrooms, quartered (or not, if you prefer)
    1 can Campbell's Healthy Request Cream of Mushroom
    2 slices whole grain wheat bread or bread crumbs
    Pure canola or olive oil cooking spray
    Poultry seasoning to taste
    Salt to taste (optional)
    Garlic salt to taste (optional)





Directions

Heat oven to 350

1. Spray both sides of bread with canola oil spray and sprinkle with poultry seasoning and garlic salt, bake for about 15 minutes until crispy. (You can skip this step and just use store bought bread crumbs.)

2. Spray pyrex pan with canola oil to prevent sticking.

3. Arrange chicken in pan, surrounded by mushrooms. You can salt it if desired.

4. Place 1/2 slice of swiss cheese over each piece of chicken.

5. Crumble bread slices over everything.

6. Cover with foil and bake for approximately 35-40 minutes.
