Barilla PLUS Thin Spaghetti 1/8 box
Shrimp, cooked, 8 large
Parsley, 3 tbsp
Lemon Peel, 1 tbsp
Lemon Juice, .05 cup
Mushrooms, fresh, 4 medium
Scallions, raw, 4 tbsp chopped
Garlic, 2 cloves
Chicken stock, home-prepared, .5 cup
Butter, unsalted, 1 tbsp
Flour, white, .05 cup
Feta Cheese, 1 oz
Directions
Begin cooking pasta.
In a large sautee pan, melt the butter and add mushrooms. DO NOT ADD SALT. Allow to sautee for about 1-2 minutes, or until lightly golden. Add garlic and sautee for another 45 seconds or so, then add red pepper flakes, lemon juice, green onions, and stir to combine. Then sprinkle the tablespoon of flour over the mixture, allowing it to cook for one minute. Slowly add the chicken stock, stirring quickly to combine the stock with the roux (the flour and butter mixture). Crumble the goat cheese in to the sauce, add the lemon zest and parsley. Add spaghetti straight from the boiling water, as well as a small spoonful of the cooking water to the sauce. Add fresh cracked black pepper to taste. Toss well to combine, and enjoy!
