Introduction

Great for using leftover baked yams Great for using leftover baked yams
Number of Servings: 15

Ingredients

    1 1/2 C flour (mix with white, wheat)
    1/2 C coconut flour (optional, if not use 1/2 white or wheat)
    1 C brown sugar
    1 tbs baking powder
    1 tsp cinnamon
    1/4 tsp salt
    1/4 tsp nutmeg
    1/4 tsp cloves, ground
    2 eggs
    1 C yam puree
    1/2 C almond milk (or milk of choice)
    1/3 C coconut oil

Directions

mix dry ingredients well, and wet ingredients in a separate bowl. add wet ingredeints to dry and mix well. (coconut oil will harden with the cold milk so mix well)

drop by spoonfulls into muffin lined pan and bake at 350 for 50-55 minutes or until inserted knife comes out clean.
